For Adela’s birthday last 2 weeks, I made her a Chocolate Banana Cake. This is the second time I made this recipe, but I didn’t put sliced banana in the filling cause last time people mistook it as a chocolate cake with banana filling. This recipe called for ripe banana in the batter, so I bought it a week earlier, by the time to bake, the bananas’ skin turn a bit brown, perfects for baking this cake.

For the filling I used mascarpone mixed with melted chocolate. But since I was in a hurry I didn’t really measure out how much chocolate I used, I just keep adding the melted chocolate to the mascarpone until I get the consistency that I wanted. Less chocolate made it creamier, more chocolate made it firmer and of course more chocolaty flavour.

Chocolate Banana Cake
adapted from Joy of Baking . Recipe yield one 23cm diameter cake.
Ingredients:

400g granulated sugar
245g flour
75g cocoa powder
1 1/2 teaspoons baking powder
1 1/2 teaspoons baking soda
1/2 teaspoon salt
2 large eggs
1 cup mashed ripe bananas (about 2-3 medium sized bananas)
240 ml warm water
120 ml milk
120 ml corn oil (Mazola oil)
1 1/2 teaspoons pure vanilla extract or banana essence

1. Preheat oven to 180° C and place rack in the center of the oven. Prepare one 23cm diameter Springform, bottom and side buttered, lined with parchment paper. Set aside.
2. In a large bowl, sift together flour, cocoa powder, baking powder and baking soda. Add sugar and salt and whisk all the dry ingredient well blended. Set aside.
3. Using a blender (food processor if you’re lucky), blend the banana first and add eggs, water, milk, oil and vanilla extract (or banana essence). Blend until the wet ingredient mix evenly.
4. Add the wet ingredients to the dry ingredients and stir using a whisk until combined. Pour the batter into the prepared springform and bake for 50-60 minutes or until a toothpick inserted in the center of the cake comes out clean. (may took longer depending on your oven, so always test first to see if it really done).
5. Wait till the cake completely cooled before cuting it into layers if you want.

p/s how to make that chocolate decoration (the Chocolate’s Angel and Name’s Plate) will be posted later, it might take a while to write it though.
