I baked this muffins last sunday cause I was really bored ^^, and also because I saw some mouth-watering muffins but it costs 2.50€ each (large size), since i’m broke now, so I’ll just settle with homebaked version then ^^.

Muffin are quite simple to make. But are also easy to make mistake. I found a great post here it explained in detail how to make good muffin. Muffins are not cupcakes,  good muffins are define by it’s dome ^^,  the high of the dome depends on the ingredients, some recipe will not rise as high as others. Just remember it’s not that you don’t need mixer when making muffins, you are NOT allow to use it ^^.

I dont have any fancy paper muffin cups, so I just wrapped some ribbon around it for sake of presentation ^^.

After comparing almost twenty Choc Chip Muffins recipes I found on the net, I decide on this recipe. This one is really nice, not some over sweet muffin but if you want to add glaze or toping, maybe a bit less sugar would be nice. I used milk chocolate chips cause that’s the only kind that I can find but If I made it again, I’ll just chop some dark chocolate, and replace some of the choc chips with it.  Using white chocolate chips is also a great idea if you like it. I don’t really like white choccolate by itself, but it can really compliment other ingredient.

Double Choc Chip Muffins:
Recipe yields 12 pieces normal size muffin. Recipe adapted from aussiecooking.com

2 eggs
125ml Oil (I used Corn oil aka Mazola oil)
240ml milk
1 tsp. vanilla
240g flour
85g sugar
35g cocoa
1 Tbsp. baking powder
1/2 tsp. salt
85g semi-sweet chocolate chips
Extra chocolate chips to sprinkle on top (if desired)

Preheat oven to 200 C and prepare muffin pan by greasing or fill with paper liners.

In a bowl mix well the eggs, oil, milk and vanilla.

In another bowl sift in flour, cocoa and baking powder together, then add in sugar, salt and chocolate chips. Whisk all the dry ingredients until all well mixed.

Pour wet mixtures to dry mixtures, and fold together gently using spatula or large wooden spoon until just mixed. (Note that it only until JUST mixed not until well blended, don’t overmix it)

Spoon into prepared pan until 3/4 full and sprinkle choc chips of top of each if desired.

Bake at 200C for 20 minutes.
