Althought this blog is mainly on desserts, but this time I want to write about a savoury dish I made for last bbq party. I like baking bread althought not that passionately. My first buns I’ve ever made was hard as a hard disk, err.. wait I’m not really sure how hard, a hard disk is, as I’ve never bite any before, but i’m sure they wouldn’t call it hard if it’s not ^^ .

So this Mini Black Pepper Beef Burgers are assemble from mini buns (recipe below), which is about 3-4 cm diameter, a mini beef patties dipped in Black Pepper Sauce, slices of cheese and pickles.
I will not post the recipe for the Beef Patties as I just used anything available in my kitchen, so you guys can google a real recipe for that. And since I didn’t satisfied with my Black Pepper Sauce, I will also not include the recipe. I’m still searching for a better recipe for that, anybody got one to share?
Mini Buns
adapted from mamafami’s recipe.
Ingredients:
500g flour
50g sugar
1 cube fresh yeast (42g), or 1 packet Active Dry Yeast or Instant Yeast (about 10g)
1 tsp bread softener (optional)
1 egg
1/2 tsp salt
150ml warm water (temperatur : 43°C-46°C)
100ml fresh milk
80g buter
1 egg yolk mix with 1 tbs water for making egg wash.

Direction:
Dissolve the yeast, if using Fresh Yeast or Active Dry Yeast, in warm water, add sugar. Let it become frothy (it will looked like cappucino ^^). If using Instant yeast, omit this step, just combine it in the flour mixture in the next step.
Put the flour, bread softener (if using), egg, salt and fresh milk in a large bowl. (I haven’t master doing it on a counter top, so I made it in a bowl, more fool-proof this way ^^).
After the yeast mixture become frothy, pour into the flour mixture, and mix everything. You can use hands or a mixer with kneading attachment here.
Add the butter, and knead some more for about 20 minutes if using hand. If using mixer about 10 to 15 minutes.
Put the dough in a lightly greased bowl and cover with damp cloth or plastic wrap. You can use any cooking oil to grease the bowl. Put it in warm place and let rise until double in size. May take from 30 to 90 minutes.
After it risen, punch down the dough, and on a lightly floured surface, roll the dough to about 1.5 cm thick or slightly more. Using a round cookie cutter about 3-4 cm diameter, cut the dough as in making cookies, and put it in a baking tray lined with baking paper. Leave enough space between buns as you want an individual buns.
Let it rise again until double in size.
Preheat the oven to 200°C .
Brush it with egg wash and sprinkle with sesame seeds on top. Bake for 15 -18 minutes or until golden brown.

Speaking of your first experience baking buns, mine was worser than yours. My dough didn’t rise up! Waited from morning till night, it rose only a bit! Luckily I have the ’semangat hang tuah’, so I kept trying. A few times after that, my buns are still hard though it did rise, a bit! Hahaha… I think, because I never give up, alhamdulillah today I managed to bake something that you can call BREAD!
You actually caught me by surprise. I was drooling over your buns photos and eagerly click for the recipe, only to find it’s from my fotopage. Kak Liza’s bun recipe is one of the reliable recipes, insyaAllah. Thanks for trying!
